two mom-approved, kid-friendly snacks in under 30 minutes

Busy moms need two things: more time and less worry. That’s why we’re sharing these mom-friendly and kid-approved recipes that can be made from start to finish in under 30 minutes. Both recipes are made with clean, nutrient-dense ingredients, free of gluten, refined grains and refined sugar.

APPLE BANANA MUFFINS
Makes approximately 9 muffins

Ingredients
  • 2 large eggs, slightly beaten*
  • 1 cup mashed bananas (about 2 medium bananas) 
  • 1 tbsp grass-fed butter, melted*
  • 1 ½ cups almond flour
  • ¾ tsp baking soda
  • Dash of sea salt
  • ½  cup finely chopped apples (about 1 small or ¾ of a large apple)

Directions
  1. Preheat oven to 350 degrees. Line muffin pan with parchment paper or preferred liner.
  2. Combine eggs, banana and melted butter. Add almond flour, baking soda and salt and mix well. Add chopped apples and mix until blended. Fill muffin cup about ¾ full.
  3. Bake for 16-18 minutes. Transfer to a cooling rack. Enjoy immediately or store in an airtight container in the refrigerator.  

Substitutions and additions: 
*Make them egg-free by substituting eggs for “flax eggs”
    (To make a single egg, mix 1 tbsp of ground flaxseed with 3 tbsp of water and leave in the fridge
    for about 15 minutes) 

*Make them dairy-free by substituting butter for coconut oil

Try another version using blueberries in place of apples or add chopped walnuts for an extra boost of healthy fats and protein.

PEANUT BUTTER SQUARES 

Ingredients
  • 1 ½ cups all natural (no sugar added) smooth peanut butter* 
  • ½ cup raw honey OR pure maple syrup
  • 2 tsp pure vanilla extract
  • 2 large eggs
  • ½ tsp baking soda

Directions
  • Preheat oven to 350. Combine all ingredients and mix well.
  • Spread mixture into lightly coated 8x8 inch baking dish. Smooth top with spatula. Bake for 20-23 minutes.
Note: squares may be a bit soft coming out of the over, they will continue to cook while cooling. When cooled, cut into squares and serve or store in an airtight container. 

Substitutions and additions: 
*Make them peanut-free by substituting peanut butter for almond, cashew or walnut butter. Make them nut-free by substituting peanut butter for sunflower seed butter. 
*Drizzle individual squares with more raw honey for extra sweetness.
